Coconut cream is yummy but for some reason mighty expensive. Coconut milk on the other hand is less expensive (thank God!) making your own coconut cream is the easiest thing you could do in your kitchen. It’s even easier than making oat flour!
All you have to do is buy a can (or 10) of full fat good quality coconut milk. Place the can/s in the fridge overnight or for a couple days until you need to use it. The fat in the coconut milk rises to the top and sets, creating a layer of coconut cream. When you need it just open the can and scrape out the coconut cream, use the left over coconut water in shakes or curries. Whip the cream with some sweetener for sweetened whipped cream or just use it plain as a whipped cream substitute.
